Tim Muxlow

Founder/Chef/Consultant

Tim Muxlow has been involved in the hospitality industry for the past 34 years being employed as head/executive chef in restaurants all over Australia. He has vast experience in both large and small operations. He has owned successful restaurants and a very busy catering company. He has been a commercial cookery teacher at Tafe and for the past seven and a half years he has operated this business as a consultant.

 

Tim has always enjoyed passing on his extensive knowledge to business owners, teaching them about an industry that has been his life for so long. He has consulted to over 40 clients. Writing menus, producing recipes and operational manuals, writing HACCP and food safety programs, advising clients on the best equipment needed and where to get them from. Tim enjoys training your staff, so they know the menu, the preparation, the presentation, the front of house staff know the menu so they can answer any of the customers questions. Your team will consistently produce every dish time and time again.

 

Tim’s strength is his ability to co-ordinate all of Food Business Consultancy’s team to deliver wonderfully successful venues.

Michael Vale

Conceptual Designer

Michael Vale is a veteran and a major player in the Sydney hospitality industry starting with his first business in 1976 at the age of 19. Michael comes to any new hospitality project with a world of experience stretching back over 32 years with hands-on involvement in a catalogue of hospitality operations in Sydney Australia, Europe, The South Pacific and in The United States.

 

In that time Michael has created and built no less than 27 Sydney based hospitality projects from concept Cafes/CBD Restaurants/A chain of Wood Fire Pizza Restaurants (One claiming to be the largest of its type in Australia seating over 400) Gourmet CBD Food Halls/a New York Bistro-Gourmet Deli/An American Beer Bar Steakhouse/A converted Sydney CBD Hotel and a Sydney beachfront Australian Craft Brew Bar and Bistro. All of these commercial operations were invented constructed & commercialized under Michael’s direct control, either as a full owner-operator/a partnership or under a consultancy/project management contract.

 

Michael’s greatest strengths are in the field of conceptual “invention” & construction of Australian hospitality operations, with a very strong understanding of the local market trends.

 

Michael has always felt that in today’s highly competitive market it is imperative to have a distinct commercial “Point Of Differentiation” and that is not only reflected in the food or alcohol concept on offer but also the way the business is built-presented and most importantly how it’s promoted and marketed.

 

Michael provides a unique service to passive investors or cash strapped experienced operators who want to enter the local hospitality market with an iconic new concept or branding name looking for capital, and needs a battle hardened credible professional to create and present the concept to third party passive investor(s) to part or fully finance the operation.

PETER GARRETT

Peter brings over 30 years’ experience to the practice of property and commercial law.

 

He acts for private clients, major institutions, property trusts, developers, banks, receivers and liquidators and corporate property owners. He is experienced in agreements for lease and leasing; franchise and food related tenancies; major subdivisions; acquisition and sale of developed property; joint venture and syndicated structures; acquisition of property and development work in each of the commercial, industrial and retail opportunities; the acquisition, management and organisation of a large agricultural investors portfolio in most states and territories of Australia; the retirement living sector for; and is engaged by a number of mortgagees on the sale of distressed assets.

 

Peter has developed a particular interest and expertise in green buildings, green leasing and sustainability. He has regularly spoken at the API, the RICS and the University of Technology Sydney in relation to these aspects as well as more general issues arising from due diligence. He is recognised as an entertaining and considered commentator in his lecturing and speaking engagements.

 

His commercial practice sees him act for a diverse range of clients in the acquisition, sale, management and organisation of businesses and he works in the wine and spirit marketing area, and branding and design.

 

Peter brings his experience to our client’s needs and is often regarded as the trusted advisor and counsel to our clients businesses.

Paul has spent the last 15 years working within the industry and truly immersing himself into every detail of what makes the international entertainment industry come to life.

 

Paul’s passion is authenticity and creativity, this he believes is crucial to the success of his venues, of which he has created in excess of 300. Paul Kelly frequents the US, Europe and Asia to ensure his brand direction and the businesses he creates are not only international icons but lead the market with innovation, recognition and success. Paul Kelly’s attention to detail and brand philosophy will ensure a seamless journey when developing your dream.

Norman Hilton is a highly respected Sydney forensic accountant with over 20 years experience in international accounting and consulting. As a partner of over 10 years with “fortune 500” firm Touché Ross. Norman headed up the Financial Consulting Division.

 

3 years as Finance Director and Managing Director of Beach Energy, a major ASX listed oil and gas production group with operations in USA and UK.

 

20 years as principal of Profin Consulting, providing financial and management advice to developing businesses, specialising in performance improvement, strategy, restructuring, management information systems and mergers and acquisitions.
